If Charbay No. 83 is the Cognac-style expression that started the distillery's legacy, No. 89 is California brandy fully coming into its own identity — a bolder, more distinctly Californian bottle that takes the same extraordinary patience and craftsmanship in a completely different direction. Distilled in the winter of 1989 from a bold blend of 74% Pinot Noir and 26% Sauvignon Blanc — two of Northern California's most celebrated wine grapes rather than the traditional Cognac varieties used in No. 83 — double distilled in Charbay's 660-gallon Alambic Charentais pot still and then aged 24 years in new French Limousin and Nevers oak barrels. Only 22 barrels were selected from the cellar and bottled into 1,000 cases. Master distiller Marko Karakasevic personally refused to cut the alcohol below 46% because the flavors were so beautifully meshed and smooth at that strength — smooth with fire in its soul, as the family describes it. The nose opens with caramel, banana, coconut, almonds, incense, and cloves, while the palate unfolds layer upon layer — pear, jasmine, toasty vanilla, caramel sauce, cigar box, roasted apples, and touches of dark chocolate — finishing warm, spiced, and remarkably refined.
