Description: Our joven Mezcal is made in small batches of 400 liters. The agave plants are cooked underground for up to 18 hours and fermented naturally. To mash the agave, we use the ancient Tahona stone method. The mezcal is then distilled twice in a small pot still, resulting in savory, exotic aromas and floral aromas of roasted red pepper, pickling spices, and roasted mango. The finish is smooth and has a satiny white ash flavor.
